My first camera was the Canon SX430IS, a classic point and shoot. It was just good enough to get some amazing shots from, while also lacking the bells and whistles that modern cameras have. The limited functionality really pushed me to work on my framing and exposure which would not have been the case with modern cameras where even a poorly framed shot ends up looking good especially with exposure correction. Currently I am using the Sony A6400. (i’ll let you go through the pictures to piece together what lenses i have)

For the longest time I was using lightroom and photoshop. However I’ve since switched to darktable, rawtherapee and GIMP. Not only are the latter open source and free to use but they are incredibly simple, work well and have everything I’d ever need. If you are starting out I’d highly recommend trying out the open source alternatives (before you sell your soul).
